Prince Albert will soon have another option for healthy food.

The grand opening for Toronto-based Freshii is set for Thursday at Prince Albert Crossings, making it the latest addition to the Prince Albert restaurant scene.

Rishi Sankhla, with Freshii, said the appetite for healthy food is alive and well in P.A.

“The response in the community has been amazing so far,” Sankhla said. “I’ve never expected this response.”

Sankhla said business has been very good so far, though they have only been open a short while. He said he initially had doubts about the city’s desire for a new, healthy-option restaurant.

“I’ve been in Prince Albert for over nine years now,” Sankhla said. “I wasn’t sure about a Freshii in Prince Albert. When we initially opened I wasn’t expecting this kind of a response. But, they say the food is amazing, and that makes me happy.”

This is not the first Freshii to open in Saskatchewan, as the restaurant already has locations in Saskatoon, Regina and Moose Jaw.
